Well considering we are in the middle of a heat wave I figured we all use something cool. And what could be cooler than watermelon. The only thing about watermelon is usually they are so big and it takes a bit to get it all gone. One recipe I found is a really simple recipe that combines the coolness of the watermelon and the need salt for a hot summer day. Enjoy!!
Salted Watermelon juice
- 6 cups cubed watermelon (from ¾ of a 6-lb. baby seedless watermelon)
¾ tsp. kosher salt
Lime wedges (for serving; optional)
- Purée watermelon in a blender until smooth.
- Strain through a fine-mesh sieve into a large pitcher or measuring glass, pressing on solids to extract as much juice as possible; discard solids.
- Mix in salt
- Pour juice into ice-filled glasses. Garnish with lime wedges if desired.
