A cool treat – Salted Watermelon Juice


Well considering we are in the middle of a heat wave I figured we all use something cool. And what could be cooler than watermelon. The only thing about watermelon is usually they are so big and it takes a bit to get it all gone. One recipe I found is a really simple recipe that combines the coolness of the watermelon and the need salt for a hot summer day. Enjoy!!


Salted Watermelon juice


  •  6 cups cubed watermelon (from ¾ of a 6-lb. baby seedless watermelon)
  •  ¾ tsp. kosher salt
  •  Lime wedges (for serving; optional)

Recipe Preparation:  

  1. Purée watermelon in a blender until smooth.
  2. Strain through a fine-mesh sieve into a large pitcher or measuring glass, pressing on solids to extract as much juice as possible; discard solids.
  3. Mix in salt
  4. Pour juice into ice-filled glasses. Garnish with lime wedges if desired.

Summer Reading List


Well the kids finished another year and they are so excited for the summer. I can’t blame them I like the summer too. There is just something about the warmth, the sun, and the freedom. You just got to love summer!!

Well that being said, there are going to be times during the summer where they will be bored, or it’s raining, or it’s just too dang hot to go outside. Well to keep them out of my hair and to keep them “engaged” we came up with their lists for the summer.
