Whoo Hoo!! Today is the World Cup Final!!!!! I am so excited for this game!! It should be the best of them all!! France vs Croatia….who would have ever thought these two teams would have made the finals!! Best of luck to both teams!!

 

Here is a good wing recipe for a great wing snack. They are really simple and turn out so tender. Hope you enjoy them as much as we did!!

 

Restaurant Style Buffalo Chicken Wings

Ingredient

  •  1/2 cup all-purpose flour
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon salt
  • 10 chicken wings
  • oil for deep frying
  • 1/4 cup butter
  • 1/4 cup hot sauce
  •  dash ground black pepper
  • 1 dash garlic powder

Directions

  1. In a small bowl mix together the flour, paprika, cayenne pepper and salt.
  2. Place chicken wings in a large nonporous glass dish or bowl and sprinkle flour mixture over them until they are evenly coated.
  3. Cover dish or bowl and refrigerate for 60 to 90 minutes.
  4. Heat oil in a deep fryer to 375 degrees F (190 degrees C).
  5. The oil should be just enough to cover wings entirely, an inch or so deep.
  6. Combine the butter, hot sauce, pepper and garlic powder in a small saucepan over low heat. Stir together and heat until butter is melted and mixture is well blended.
  7. Remove from heat and reserve for serving.
  8. Fry coated wings in hot oil for 10 to 15 minutes, or until parts of wings begin to turn brown.
  9. Remove from heat, place wings in serving bowl, add hot sauce mixture and stir together. Serve.

Today we have a little bit of a spicy, cheesy snack…Sausage – Cheddar Balls!! I love cheese and sausage too. Hope you enjoy this as much as I do!!

Sausage and Cheddar Balls

Ingredients

    • 1/2 teaspoon coarse salt
    • 1/4 teaspoon ground pepper
    • 1/2 teaspoon cayenne pepper
    • 1 1/2 teaspoons baking powder
    • 2 cups grated cheddar (1/2 pound)
    • 1 pound bulk breakfast sausage
    • 1/2 large yellow onion, grated on large holes of a box grater 
    • 3 tablespoons unsalted butter, melted

Directions

  1. Preheat oven to 400 degrees.
  2. In a large bowl, whisk together flour, salt, pepper, cayenne pepper, and baking powder.
  3. Add cheddar and toss to coat.
  4. Add sausage, onion, and butter.
  5. With your hands, mix until well combined and roll mixture into 1-inch balls.
  6. Place balls, 1/2 inch apart, on a parchment-lined baking sheet.
  7. Bake until balls are golden and cooked through, 25 minutes.
  8. Serve warm.

Wow what amazing games that have been played!!! I hate to say good bye but two more were eliminated yesterday Mexico and Japan….so sorry to see you go!! Congratulations    Brazil and Belgium you made it to the Quarter-finals!!!!

 

Today I have an amazing and easy shrimp recipe for you!! I love shrimp. Whether it be fried, grilled or put in a gumbo, there is something about shrimp. Hope you enjoy it as much as me 🙂

 

Coconut Shrimp

Ingredients

  •  1 egg
  •  1/2 cup all-purpose flour  
  •  2/3 cup beer
  •  1 1/2 teaspoons baking powder
  •  1/4 cup all-purpose flour
  •  2 cups flaked coconut
  •  24 shrimp
  •  3 cups oil for frying

Directions

  1.  In a medium bowl, combine egg, 1/2 cup flour, beer and baking powder.
  2. Place 1/4 cup flour and coconut in two separate bowls.
  3. Hold shrimp by tail, and dredge in flour, shaking off excess flour.
  4. Dip in egg/beer batter; allow excess to drip off. Roll shrimp in coconut, and place on a baking sheet lined with wax paper. Refrigerate for 30 minutes.
  5. Meanwhile, heat oil to 350 degrees F (175 degrees C) in a deep-fryer.
  6. Fry shrimp in batches: cook, turning once, for 2 to 3 minutes, or until golden brown.
  7. Using tongs, remove shrimp to paper towels to drain.
  8. Serve warm with your favorite dipping sauce.

Sausage Mushroom Appetizers

Ingredients

Directions

  1. Remove mushroom stems (discard or save for another use); set caps aside.
  2. In a large bowl, combine the remaining ingredients.
  3. Stuff into the mushroom caps.
  4. Place in two greased 13-in. x 9-in. x 2-in. baking dishes.
  5. Bake, uncovered, at 350 degrees F for 16-20 minutes or until heated through.

Here we are we had two Amazing teams knocked out yesterday: Argentina and Portugal. Sorry to see you go. Congratulations to France and Uruguay!!!! You move on to the Quarter-Finals!!!

 

Here is a good recipe a friend of mine gave me. It’s a pretty good recipe for a quick snack or when you are in a pinch can even be a light lunch. Enjoy!!

 

Cheesy Greek Pinwheel Appetizers

Ingredients

  • 1 cup Herb & Garlic Cream Cheese 
  • 1 cup Crumbled Feta Cheese with Oregano, Sun Dried Tomatoes and Black Pepper
  • 1 cup Shredded Mozzarella Cheese
  • 1 pkg. (300 g) frozen chopped spinach, thawed, well drained
  • 3 green onions, finely chopped
  • 6 large flour tortillas
Directions
  1. Mix all ingredients except tortillas until blended; spread onto tortillas. Roll up. Wrap individually in plastic wrap. Refrigerate 2 hours.
  2. Heat oven to 375°F. Unwrap roll-ups. Trim and discard ends.
  3. Cut each roll-up diagonally into 10 slices.
  4. Place on parchment-covered baking sheets.
  5. Bake 10 min., turning after 5 min.

Who doesn’t like meatballs? Especially when it comes to them being finger food 🙂 So easy to pick up and pop into your mouth. I found this one and it’s a pretty simple and good. Enjoy!!

 

 

Cocktail Meatballs

Ingredients

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, mix together the ground beef, egg, water, bread crumbs, and minced onion. Roll into small meatballs.
  3. Bake in preheated oven for 20 to 25 minutes, turning once.
  4. In a slow cooker or large saucepan over low heat, blend the cranberry sauce, chili sauce, brown sugar, and lemon juice.
  5. Add meatballs, and simmer for 1 hour before serving.

Recipe Friday – Bacon Cheddar Deviled Eggs

Well today is my usual Friday recipe post but to keep with the theme of snacks and appetizers  have found this delicious recipe for Deviled Eggs. I am more of a traditionalist when it comes to Deviled eggs but when I found this I had to try it. I mean what can you say when it has bacon and cheese in it…lol!!  Enjoy!!

 

 

Bacon Cheddar Deviled Eggs

Ingredients

Directions

  1. Place eggs in a saucepan, and cover with cold water. Bring water to a boil and immediately remove from heat.
  2. Cover, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, and cool. To cool more quickly, rinse eggs under cold running water.
  3. Meanwhile, place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown.
  4. Alternatively, wrap bacon in paper towels and cook in the microwave for about 1 minute per slice. Crumble and set aside.
  5. Peel the hard-cooked eggs, and cut in half lengthwise. Remove yolks to a small bowl.
  6. Mash egg yolks with mayonnaise, crumbled bacon and cheese.
  7. Stir in mustard. Fill egg white halves with the yolk mixture and refrigerate until serving.

Today I got a recipe that is really familiar to almost everyone. It has the cocktail weenies and bacon all wrapped up together. Enjoy!!

 

 

Bacon Wrapped Smokies

Ingredients

  •  1 pound sliced bacon, cut into thirds
  •  1 (14 ounce) package beef cocktail wieners
  •  3/4 cup brown sugar, or to taste

Directions

  1. Preheat the oven to 325 degrees F (165 degrees C).
  2. Refrigerate 2/3 of the bacon until needed. It is easier to wrap the wieners with cold bacon.
  3. Wrap each cocktail wiener with a piece of bacon and secure with a toothpick. Place on a large baking sheet. Sprinkle brown sugar generously over all.
  4. Bake for 40 minutes in the preheated oven, until the sugar is bubbly.
  5. To serve, place the wieners in a slow cooker and keep on the low setting.

Mini Philly Cheesesteak

Ingredients

Directions

  1. Preheat oven to 400 degrees F (200 degrees C). Line baking sheets with aluminum foil.
  2. Melt butter in a skillet over medium-high heat. Whisk flour into hot butter and cook, whisking constantly, until mixture is pale and flour taste cooks off, about 1 minute.
  3. Pour milk into flour mixture and cook, whisking constantly, until mixture is hot and thickened, 3 to 6 minutes. Add 2 ounces provolone cheese, nutmeg, cayenne pepper, and salt; stir until cheese is completely melted. Remove from heat.
  4. Season steak all over with salt and ground black pepper.
  5. Heat 1 tablespoon olive oil in skillet over medium-high heat.
  6. Cook steak in hot oil, turning occasionally, until meat is slightly firm and pink on the inside, 5 to 7 minutes. Transfer meat to a plate.
  7. Return skillet to heat and pour water into the skillet; bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon.
  8. Pour liquid from the skillet over steak. Cool steak to room temperature; dice meat and place meat and accumulated juices from the plate into a large bowl.
  9. Heat 1 tablespoon oil in a skillet over medium-high heat; saute onion and peppers in hot oil until softened and slightly translucent, about 5 minutes.
  10. Stir peppers and onions mixture into diced meat; season with salt and pepper.
  11. Spread bread slices out on prepared baking sheets and drizzle remaining olive oil over the top.
  12. Turn slices over so that the oiled-side is facing down. Spread a thick layer of cheese mixture onto each slice. Spoon meat mixture over cheese.
  13. Sprinkle provolone cheese over the top of each slice.
  14. Bake in the preheated oven until browned and cheese is melted, 12 to 15 minutes.

WOW what a World Cup it has been!!! Teams that we thought were going to be at top fell to the side and teams that had almost no chance now are winning!! We got one more week of group matches and then the Round of 16 (knockouts) will start.

 

Well with all the excitement here is an easy appetizer for the games NACHOS!! Enjoy!!

 

 

Super Nachos

Ingredients

Directions

  1. Cook and stir ground beef in a skillet over medium heat until meat is crumbly and no longer pink, 5 to 10 minutes. Drain excess grease.
  2. Stir in taco seasoning mix and water and simmer until beef mixture has thickened, 8 to 10 minutes.
  3. Set the oven rack about 6 inches from the heat source and preheat the broiler. Line a baking sheet with aluminum foil.
  4. Spread tortilla chips on the prepared baking sheet; top with Cheddar cheese and dot with refried beans and ground beef mixture.
  5. Broil in the preheated oven until cheese is melted, watching carefully to prevent burning, 3 to 5 minutes.
  6. Top nachos with salsa, sour cream, black olives, green onions, and jalapeno peppers.
